For those with access, there is a really interesting (though fairly short) paper currently in press with the journal http://www.sciencedirect.com/science/journal/00320633:

Mapping of the icy Saturnian satellites: First results from Cassini-ISS
Planet. Space Sci., In Press, Corrected Proof, Available online 31 July 2006
Th. Roatsch et al.

For those without access to Planetary and Space Science, you may wish to see an extended abstract by Roatsch et al. ["Mapping of the Icy Saturnian satellites" (http://210.212.130.67/isprs/pdfs%5Cabstract%5CPWG_47_092.pdf)] to be presented at the ISPRS International Symposium on "Geospatial Databases for Sustainable Development," which is to be held at Goa, India, September 27-30, 2006. For a list of the conference abstracts (a few are planetary sciences-related), click http://210.212.130.67/isprs/abs_acp_view.asp.

Are the maps available for download somewhere?

These would basically be the same maps released in December. this paper just describes the conventions used and to be used for the mapping of Saturn's icy satellites.
