I would have loved to see more of the sunset/sunrise atmosphere shots as well.

I think there have been some closeups of the limb taken over time, but done in more exotic filters. On the few occasions when there was RGB coverage, it was of much lower resolution than the first image you posted. I think this is the 2nd highest resolution shot of the limb I have. Note the detached haze layer above the equatorial region - that's real, not an image artifact.

This is a subject I'm also interested in but I haven't spent much time processing these images yet - I'd be very interested in seeing processing results for some of these.

I have seen a number of hi-res limb images, including images through multiple filters acquired during star occultations. Most (all?) of these include RGB.

Some limb image sequences I know of from the PDS releases. In each case I'm listing the starting image from a sequence of images:
